Dal Chawal
Ingredients (for 4p):
• 1 cup basmati rice
• 1 cup masoor dal (red lentils)
• 1 medium tomato, medium diced
• 5 cloves garlic
• 1 fresh chilli, sliced in half
• 1 dried red chilli
• 3 1/2 tbsp ghee
• 1/2 tsp turmeric powder
• 1/2 tbsp mustard seeds
• 1/4 tbsp cumin seeds
• Salt
How to prepare:
The dal
1. Add masoor dal to a pressure cooker and wash it a few times till the water runs clear.
2. Then, add tomatoes, garlic, chilli, water, turmeric, and salt and pressure cook for 2-3 whistles on medium heat. After the pressure drops, open the cooker and ensure that the dal is soft and mash it to your liking- add in water if necessary to get a lentil soup type consistency
3. In another pan, add ghee on medium heat. Add mustard seeds and let them splatter for a while- then add cumin seeds and let them roast for 30 seconds or so.
4. Add dried red chilli and garlic cloves and sauté until the garlic is brown.
5. Turn off the heat and quickly add it to the pressure cooker with dal. Boil the dal well, if you had added water, to get it to desired consistency and simmer for 2 minutes in the cooker.
6. Garnish with some coriander and serve it on some steaming hot white rice
The rice
1. Wash the rice in a pot until water runs clear.
2. Add in enough water that it will reach the first column of your index finger when you place it on rice.
3. Add some salt and ½ tbsp of ghee. You can also add a 1 tsp of vinegar to get fluffier rice.
4. Boil the rice until the water has evaporated and reduced on medium heat- check if the rice easily breaks, if not add in water as necessary.
5. Turn the heat down and steam the rice with a lid for 5-10 mins or until the water is completely gone and the rice is soft
